Roditis nature is made from Roditis grapes hand harvested in Tetramythos’ oldest Roditis vineyards at an altitude of 850 metres, rich in limestone. The wine is spontaneously fermented and subject to malolactic fermentation, with 7 months on the yeast cells. It is unfiltered with no added sulphites, stabilized and clarified using natural methods.
The wine has rich notes of ripe stone fruit with hints of citrus and minerality. Decently long aftertaste with a whiff of bitterness and salt, that makes it the perfect companion for food.
Roditis nature goes well with a range of dishes and balances well with spices - recommended with vegetarian dishes, fish and poultry.
Serve it in large glasses or decant the wine before serving - let it breathe a little. It might be a bit shy, to begin with, but will develop nicely after just 30 minutes.
Roditis Nature has been far and wide, not least as the house wine at Spisehuset, Terroiristen, Mastro, Kate's Joint in København and at VOLT in Stockholm. At the moment, it can be found at Delphine and Blåregn in Copenhagen.
