Iliana Malihin’s Thrapsathiri is a light, crisp, refreshing white with a floral note and a beautifully balanced acidity. Perfect for pairing with food like light fish dishes or pasta, or drinking by itself in the sun, for a little taste of Crete.
Iliana Malihin established her winery in 2019, by sourcing local grapes from farmers committed to her exacting cultivation standards. All the wines are created under Iliana’s expert supervision, using philosophies of organic and biodynamic cultivation and minimum intervention.
The Thrapsathiri grapes are hand-picked from vineyards in the region of Melampes. The vineyards consist of a mix of young plantings at 10 years up to vines that are 140 years-old vines and pre-phylloxera. The grapes are pressed after destemming and vinified using long extraction with fermentation on wild yeast at 20°C. 10% matured on old, 3rd use-barrels for 8 months and then 9 months in the bottle. During maturation, Cretan music is played for the wine - a vital step in the vinification process. It is bottled without fining and with very low sulphite use.
