Skitali means "the passing of the baton" - after the tragic death of Haridimos Hatzidakis in 2017, a single tank of Assyrtiko was left in storage for 12 months, longer than usual for this style of wine. This resulted in one of the most beautiful and exceptional Santorini wines ever made. Haridimos' daughter, Stella, designed the label as a tribute to her father, and the production of Skitali has continued in his honour.
The Assyrtiko grapes are grown on selected vineyards of Pyrgos and Megalochori. The vines are non-irrigated and ungrafted and they grow in soil rich in volcanic compounds. They have been turned in the traditional koulouri way, a shape that resembles a pretzel and are subjected to constant sun, minimal rain and powerful winds.
After hand-picking, the grapes are subjected to direct pressing and fermentation under controlled temperature (17-18 ° C) with indigenous yeast. The wine is matured with noble lees for 12 months in stainless steel tanks and 10 months of ageing in the bottle, unfiltered.
This masterpiece white has a mild yellow colour with hues of gold. White flowers and citrus on the nose, and powerful and intense in the mouth with strong acidity, Intense minerality and lasting aftertaste.
A complex wine that can be paired with fatty fish, creamy cheeses, chicken, pork or pasta dishes. This wine has ageing potential of at least 7 years.
