This wine comes to us from the people of Hatzidakis Winery, who work with an organic and biodynamic philosophy in their vineyards and with minimal intervention in their cellars.
The rare local Adinani grapes are harvested from the winery's oldest vineyards - Pyrgos, Megalohori, Akrotiri and Emporio. The grapes are destemmed and cold macerated to for 12 hours, before beginning the fermentation with indigenous yeasts at a controlled temperature of 16 to 18°C for a month. It is then aged on steel tanks with the noble lees for 6 months on stainless steel tanks and bottled without filtering.
The label was designed by Haridimos’s daughter, Stella, when she was 3 years old. She has since taken over the winery after her late father, continuing his legacy.
Aidani has gold-yellow colours, fine aromas of gardenia and small white flowers with notes of citrus fruits, pear, nuts and lemon notes. Elegant texture, moderate body with a buttery and salty aftertaste.
