An exuberant orange, great for food or by itself in the sun or in winter.
The vines grow in the volcanic soils of the island of Lemnos, cultivated organically, with no chemical intervention, irrigation or fertilization. They are formed into cups and harvested at the end of August.
After harvesting, the grape arrives at the winery in small crates. They are crushed and transferred to winemakers for pre-fermentative extraction and cycled for 5 days to start the spontaneous fermentation. The mass is lightly pressed in a pneumatic press and the juice is transferred to steel tanks for final fermentation, before bottling without the use of stabilizers, filtering or sulphites.
Terra Ambera has aromas of quince, lemon zest, dough, yeast, porcini mushroom and herbs. In the mouth, it is balanced, with a discreet acidity and restrained alcohol and full body. The dense structure and the long aftertaste are balanced and expressive. An earthy and oily wine, full of richness and character.
Pair it with oily fish, such as tuna, or vegetarian dishes, especially anything Mediterranean or ripe cheeses such as gruyere.
