This rare wine from Amyntaio was produced by Laurens Hartman on the Xinomavro grape from selected fields of older ungrafted vines, planted in soil rich in sand and clay. The fields grow at an altitude of 650 meters, in an area known for very cold winters with heavy rain and snow, as well as dry summers with cold nights.

To attain the best quality wine, only the free-run most is used for the production. After fermentation and a short stay on steel tanks, the wine is aged for about a year on old French casks, before being transferred to the bottles without the use of pumps or filters.
